Grilled Chicken Maryland with Lemon

Fresh Fodder Roasted Butternut Pumpkin with Chickpeas

INGREDIENTS

2 Chicken Marylands - skin on
300g Fresh Fodder Roasted Butternut Pumpkin with Chickpeas
1 Lemon, cut in half
Olive Oil
200g Fresh Fodder Tzatziki (Optional)
Shallots (to garnish)

METHOD

Slice Lemons across the centre into round slices 1cm thick.

In a heavy based grill pan, drizzle Olive Oil and bring to a Medium Heat.

Lightly grill Lemon slices on each side to gain a little colouration, and set aside on some paper towel to drain.

Bring pan heat up to Medium/Hot and Grill Chicken Maryland, skin side down for approximately 6-7 minutes.

Flip and grill for 2-3 minutes on the other side and then pop in the oven for 10 mins at 180 deg to cook through.

Remove chicken from oven and allow to rest for a few minutes.

Take your plates, scoop the Fresh Fodder Roasted Butternut Pumpkin with Chickpeas side salad, serving half onto each plate. Arrange the Lemon slices and Chicken Maryland on each plate.

Drizzle with a spoonful of Fresh Fodder Tzatziki across the Fresh Fodder Roasted Butternut Pumpkin with Chickpeas salad, sprinkle with sliced shallots to garnish. Season with salt and pepper as required.

Serve and enjoy!
