Minestrone Soup with Fresh Fodder Bruschetta

Fresh Fodder Basil Pesto & Fresh Fodder Bruschetta (Lightly Salted)

INGREDIENTS

1 x 200g Fresh Fodder Basil Pesto
1 x 150g Fresh Fodder Lightly Salted Turkish Bruschetta
Olive Oil
1 x Onion - Brown
1 x Carrot - Diced
2 x Celery Sticks - Diced
200g x Rindless Bacon, Diced
4 Cups x Vegetable Stock
2 x 400g Tins of Crushed Tomatoes
1 x 400g Tin of Cannelinni Beans
250g x Rinsed and Drained Dried Pasta Twists - Choose your favourite shape, but nothing too big!
Parmesan Cheese - To Serve
Basil Leaves - To Serve

METHOD

Heat the oil in a heavy based deep saucepan over a medium heat.
Add the diced onion, carrot and celery and cook until softened.
Add the bacon and cook until browned, stirring as needed.
Add the tinned tomatoes and the vegetable stock and bring to the boil.
Reduce to a simmer and add the pasta.
You may need to top up with a little water as the pasta swells and cooks.
Add in the Cannelinni beans and allow to simmer for half an hour.

Serve in deep bowls with a generous dollop of Fresh Fodder Basil Pesto in the centre.
Garnish with a handful of rated parmesan cheese and fresh basil leaves.
Serve with two or three slices of Fresh Fodder Lightly Salted Turkish Bruschetta for a great crouton substitute!
