Splayed Roast Chicken with Lemon & Garlic

Fresh Fodder Penne Pasta with Basil Pesto Salad

INGREDIENTS

1 Splayed Chicken
300g Fresh Fodder Penne Pasta with Basil Pesto
1 Lemon
2-3 Whole Garlic Cloves
Fresh Rosemary
Chat Potatoes
Olive Oil

METHOD

Preheat the oven to 200C.

In a baking tray, drizzle Olive Oil to coat the base, add the Splayed Chicken (skin side up).

Cut the Chat Potatoes in half and add to the pan. (2-3 Whole Per Person depending on appetite)

Using the flat of the knife blade, crush the Garlic Cloves and add to the pan, skin on and scattered through.

Cut the Lemon in half, and cut two slices to lay on top of the Chicken.

Squeeze the juice of the remaining Lemon halves over the Chicken, drizzle all with a little olive oil, and dress with Rosemary.

Cook for 45 minutes - 1 hour depending on the size of the bird.

Remove from oven. Quarter the chicken. Plate up with Fresh Fodder Penne Pasta with Basil Pesto Salad, Chats and Chicken pieces and enjoy!
