Lime & Chilli Salmon Tortillas with Tzatziki

1 tsp Sea Salt
Zest of One Lime
Chilli Flakes - To Taste
4 Salmon Fillets - Boned
2 tbsp Olive Oil
4 Wholemeal Wraps
1/4 cup Mint Leaves
1 cup Cherry Tomatoes
1 cup Cubed Cucumber
200g Fresh Fodder Tzatziki


This recipe is a fresh twist on a standard weekly serving of burritos in our home.

Mix the sea salt, lime and chilli together and rub over the salmon fillets with half of the olive oil.

Add the remaining oil to a saucepan over medium-high heat, cook the fillets, two at a time, for four minutes on each side or until firm to touch.

Meanwhile, whisk together the salad dressing, combine salad ingredients and lightly dress.

Warm the tortillas, flake the fish into nice big chunks and serve on a large platter with the salad and Fresh Fodder Tzatziki on the side.

Place on the table and invite everyone to help themselves.
