Nachos with Guacamole

Fresh Fodder Guacamole


1 bag White Corn Chips (we used Mission brand)
500g Beef Mince
1 tub Fresh Fodder Guacamole
1 small tub Sour Cream
1 Brown Onion
400g Crushed Tomatoes
200g Crushed Tomatoes
Chopped Basil
Chopped Oregano
Generous pinch of Saltbird Salt and Spice Rub
Cracked black pepper
400g Cannelinni or White beans - drained
50g Butter
2 Cloves Crushed Garlic
Chilli Flakes
Large handful Parmesan Cheese
Large handful Mozzarella Cheese
Paprika and/or Chilli Powder
Olive Oil


Preheat your oven to 180 deg.

Dice the onion and cook for 5 minutes in a heavy based pan with a little olive oil until it is tender. Add beef mince and cook through. Add 400g of crushed tomatoes, along with the salt, pepper and herbs and cook on a low heat until the sauce has reduced and thickened.

In a saucepan, melt the butter over a medium heat and add the garlic cloves, cooking until it has softened and being careful not to burn it. Add the white beans, and chilli flakes to taste.

Reduce to low heat and allow to simmer for 10-15mins.

Remove from heat and set aside for assembly of Nachos.

(Tip: We like to make these two components separately as the beans are delicious on their own, but if you are keen to save on time and washing up, then just throw the beans, garlic and chilli in with the mince and adjust the quantity of crushed tomatoes accordingly.)

Lightly oil an oven proof tray (this will be the dish that you will serve the nachos in) and layer in half of the corn chips. Add in half the mince, and a layer of beans and then add another layer of corn chips. Add the remaining mince and beans and sprinkle the cheese across the entire top layer.

Place the nachos in the oven for around 5 mins to allow the cheese to melt.

Remove from oven, and allow to sit for 5 mins.

Add a large dollop each of sour cream and guacamole, sprinkle with paprika (or if you like it hot - chilli powder) and serve.

We always pop out an additional dipping bowl of guacamole for any stray corn chips!
